Method


  1. Place rice, water and paste in a saucepan and stir to combine. Bring to the boil, then reduce heat, cover and gently simmer for 15 minutes. Add peas, then stand covered for 5 minutes

  2. Meanwhile, heat half the oil in a large non-stick frying pan or wok over a high heat. Add egg and swirl to coat pan. When firm, break into pieces and place in a bowl, cover with foil and set aside

  3. Add remaining oil to pan over a medium heat. Cook green onion and corn, stirring for 5 minutes. Increase heat and add prawns. Stir for 5 minutes or until cooked through. Add ginger, egg and rice and stir to combine. Stir in Thai basil

  4. Serve fried rice topped with extra Thai basil, bean sprouts and peanuts and lime wedges

    * 1 kilo unpeeled large green prawns equals approximately 600g peeled prawns.
