Peri Peri Chicken

Peri Peri Chicken
Method
Slash each chicken fillet with 2 long cuts (not all the way through). Place chicken and half the marinade in a bowl and stir to coat. Note: Bottles of Peri-Peri marinade are available in ‘medium’ and ‘hot’ varieties. They can be found in the sauces section of the supermarket.
Cover an oven grill plate with a double thickness of foil and turn up edges slightly. Place chicken on prepared grill plate, slashed side down. Preheat oven grill to high, then place chicken under the grill for 3 minutes. Turn chicken, then spread reserved marinade evenly over top of chicken and cook for 5 minutes longer or until just cooked through.
To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Set aside.
Divide rice between 4 bowls, top with chicken and spoon over juices from the grill plate. Serve with beans and lime wedges, if desired.
