Stir fry your SunRice Mexican Style Rice for 1 minute in a lightly greased wok or medium-large pan.
Add the black beans, carrots, peas, corn and capsicum. Cook, stirring occasionally, for 2-3 minutes or until the vegetables are warmed though.
Top with avocado and tomatoes. Season. Serve with coriander and lime wedges.
