Lyndi’s One Tray Portuguese Chicken with Brown Rice
Ingredients
Method
Preheat oven to 180C/355F
Drizzle oil on a large baking tray. Add onion, capsicum, corn and 1 Tbsp of seasoning and then stir to mix well. Add rice and stock into the baking tray and stir to combine.
Place chicken on top of combined ingredients and sprinkle remaining seasoning on top of chicken pieces.
Cover with foil and bake in the oven for 45 minutes.
Remove foil, then return to the oven for another 15 minutes or until brown and water is fully absorbed.
Notes:
- It’s really important to use chicken with the bone as it will cook at the same time as brown rice. You can choose to remove the skin if you like.
- Portuguese chicken seasoning can be found in all major supermarkets in the spice section. Otherwise, make your own with a combination of paprika, chilli flakes, salt and pepper.
