Method


  1. Combine laksa paste, stock and coconut milk. Bring to the boil over a medium heat.

  2. To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet.

  3. Add the chicken, capsicum, corn and snow peas to pan.

  4. Simmer for 3 minutes until the chicken has cooked through.

  5. Add the lime juice and coriander.

  6. Divide rice between serving bowls.

  7. Ladle in the hot soup, including chicken and vegetables then serve immediately.
