Method


  1. Place rice & quinoa in a saucepan. Add 2 cups cold water and bring to the boil. Reduce heat and simmer, covered for 25 minutes. Remove from heat and stand, covered for 5 minutes.

  2. Meanwhile, combine burrito seasoning and 2 tablespoons of the oil in a large bowl. Add chicken and stir to coat. Allow to stand for 15 minutes.

  4. Combine cherry tomatoes and coriander. Serve chicken fajita with brown rice & quinoa, cherry tomatoes, lettuce, avocado, light sour cream and lime wedges.
