Chicken & Broccolini Rice Bake
Method
Preheat oven to 2000C
Heat 1 tablespoon of the oil in a large non-stick frying pan over a high heat. Add the chicken and cook for 3 minutes each side. Set aside.
Reduce frying pan heat to medium. Add onion and bacon and cook for 5 minutes, stirring occasionally. Add rice, water, creamed corn and paste. Stir to combine, then transfer mixture to a 4 litre capacity; 7cm deep baking dish. Top with chicken and bake for 45 minutes, or until most of the liquid is absorbed.
Remove from oven and sprinkle with cheese, then top with broccolini. Drizzle broccolini with remaining oil. Return to oven and bake for a further 8 minutes. Cover loosely with foil and allow to stand for 10 minutes.
Meanwhile, combine tomatoes and chilli jam. Serve with the Chicken and Broccolini Bake.
